Steamed Rice Cake

Baekseolgi, literally "white snow cake," is the purest expression of Korean rice cake. It has no filling, no coating, no coloring. Just rice flour, sugar, salt, and water, steamed into a cloud-white cake with a texture somewhere between a dense sponge and soft tteok. It is the first food placed on a Korean baby's dolsang (first birthday table), symbolizing purity and a long life. Understanding this recipe teaches you the fundamental technique behind all Korean steamed rice cakes.

The critical step is sieving. After you mix the dry ingredients with water, the mixture should be crumbly and moist, like damp sand. You then pass it through a coarse sieve, breaking up any clumps. This creates the light, airy texture that defines baekseolgi. Skip the sieving, and you get a dense, heavy cake. The sieving introduces tiny air pockets throughout the flour, which expand during steaming.

Do not press or compact the flour when loading the steamer. Gently pour the sieved mixture in and level the top with a chopstick. Pressing defeats the purpose of the sieving by pushing out all those air pockets you just created.

The steaming must be vigorous. Use high heat and make sure you have plenty of water in the steamer base. A weak steam produces an undercooked center and a dense texture. After 25-30 minutes, test with a skewer: it should come out clean. Let the cake rest in the steamer for 5 minutes before removing.

Baekseolgi dries out within a day, so it is best eaten fresh or same-day. For variations, fold in dried fruits (jujubes, raisins), beans (kidney beans, black beans), or nuts before steaming. These additions are common and turn the plain version into something more festive while using the exact same technique.
