Songpyeon is the rice cake of Chuseok, the Korean harvest festival, and there is a saying that whoever shapes the most beautiful songpyeon will meet a beautiful spouse. Whether or not that is true, the shaping skill is genuinely difficult to master and worth practicing.

The name comes from the pine needles (song) traditionally laid in the steamer. The pine needles are not just decoration. During steaming, they release a subtle resinous aroma that infuses the rice cakes with a fragrance you cannot replicate any other way. If you can source fresh pine needles (make sure they are from a food-safe, unsprayed tree), the difference is remarkable. Otherwise, steaming without them still produces excellent songpyeon.

The dough requires hot water, not cold or warm. Hot water partially cooks the rice flour, creating a more pliable and less crumbly dough that holds its shape during filling and sealing. Add the water gradually because rice flour absorbs liquid at different rates depending on the brand. You want a dough that feels like soft clay: smooth, not sticky, and easy to shape.

The traditional sesame seed filling is my favorite: toasted sesame seeds ground lightly with sugar and a touch of honey to bind. Other classic fillings include sweetened red bean paste, chestnuts, and mung bean. Each family has their preferred combination, and making multiple filling types for one batch is common.

The shaping technique takes practice. Flatten a walnut-sized piece of dough into a circle in your palm, add about a teaspoon of filling, then fold and pinch the seam together, pressing out any air pockets. The goal is a smooth half-moon with no cracks. Cracks let steam in during cooking and make the songpyeon lose its shape. After steaming, brush immediately with sesame oil while still hot. This prevents sticking and gives them a beautiful sheen.
