Gochujang is a thick, dark red paste made from fermented soybeans, glutinous rice, and red pepper powder. It's sweet, spicy, and deeply savory all at once. You'll find it in bibimbap sauce, tteokbokki, stir-fry marinades, and dipping sauces. A single tub lasts months in the fridge. If you're buying your first one, start with a mild version — you can always add more heat with gochugaru. The most common brands in the US are CJ Haechandle and Sempio, both available at Asian grocery stores and on Amazon.
