Haemul-juk is the porridge you get at Korean seafood restaurants on Jeju Island after a plate of freshly caught sashimi. The leftover fish and shellfish trimmings go into a pot with rice and water, and thirty minutes later you have a porridge so rich in seafood flavor that it tastes like the ocean in a bowl.

The brief sauteing of the seafood before adding water is what separates a good haemul-juk from a watery, bland one. Two minutes in sesame oil gives the shrimp and squid a lightly caramelized exterior and creates fond, those browned bits on the bottom of the pot, that dissolve into the porridge as it cooks. That fond is concentrated seafood flavor.

Chopping the seafood small is important for porridge in a way it is not for stir-fries or stews. You want the shrimp and squid pieces to be about the size of a pea, small enough to distribute evenly through the porridge so every spoonful has some. Large chunks create an uneven eating experience and do not release as much flavor into the rice.

The cooking time of twenty-five minutes is a balancing act. The rice needs that long to break down into a creamy porridge. But seafood overcooks quickly and turns rubbery. The sauteing at the beginning gives the seafood a head start on flavor development, and then the long simmer with the rice is gentle enough that the small pieces do not toughen up.

Stirring is more critical with seafood porridge than with plain rice porridge because the chopped seafood tends to sink and stick to the bottom. A gentle stir every three to four minutes keeps things moving without breaking apart the delicate shrimp and squid.

In Korea, seafood porridge is considered both a comfort food and a recovery food. It is gentle on the stomach while being packed with protein and minerals from the seafood. Hospitals in Korea often serve a version of haemul-juk to patients, and it is a common first meal after illness.
