Fish Fritters

Saengseonjeon is the fish version of Korea's beloved jeon family, and it appears on holiday tables alongside gochujeon and donggeurangttaeng. The technique is identical -- flour, egg, pan-fry -- but fish brings its own set of challenges that are worth understanding.

The number one mistake is using wet fish. Any moisture on the surface prevents the flour from sticking, which means the egg slides off, which means you end up with bare fish in a pan full of scrambled egg. Pat each slice bone-dry with paper towels before you start the flour step. This is not a suggestion -- it is the difference between success and frustration.

Slice thickness matters too. Half an inch is the target. Thinner slices overcook and fall apart when you flip them. Thicker pieces take too long and the egg coating burns before the fish cooks through. A half-inch slice gives you a piece that cooks in the same time as the coating.

Cod and snapper are the most common choices, but any firm white fish works. Avoid flaky fish like tilapia or sole -- they fall apart too easily. Halibut is excellent if you can afford it. Frozen fish works fine as long as you thaw it slowly in the fridge overnight and dry it thoroughly.

The dipping sauce is simple: soy sauce, rice vinegar, and a splash of water. Some people add a pinch of gochugaru. The acidity cuts through the richness of the fried egg coating and highlights the clean flavor of the fish.

Saengseonjeon is best eaten immediately. Unlike meat-based jeon that reheats decently, fish jeon loses its texture fast. Plan to serve these straight from the pan to the table.
