Stuffed Pepper Fritters

Gochujeon shows up at every Korean holiday table -- Chuseok, Lunar New Year, memorial ceremonies. It is one of those jeon (pan-fried dishes) that takes a bit of assembly-line work but rewards you with something that tastes far better than the effort suggests.

The pepper choice matters. You want large, mild Korean green peppers (kkwarigochu or cheongyang if you like heat). In the US, Anaheim peppers or Italian frying peppers are the closest substitutes. Bell peppers are too thick and watery. Jalapenos are too small and too spicy for this application.

The stuffing is intentionally simple: ground pork seasoned with soy sauce. Some recipes add tofu, minced onion, or glass noodles to stretch the filling, which is fine for everyday cooking. But the classic holiday version keeps it pure -- just well-seasoned meat pressed firmly into each pepper half.

The flour-then-egg coating is a technique called ot-ip-higi in Korean cooking, and it appears across many jeon recipes. The flour creates a dry surface for the egg to cling to, and the egg sets into a thin golden layer during frying. Without the flour step, the egg slides right off.

One technical detail that makes a difference: press the meat side down into the flour first. This ensures the meat surface, which is the hardest part to coat evenly, gets good flour coverage. Then dip the whole thing in egg and straight into the pan, meat side down first.

Fry over medium heat, not high. These need time for the meat to cook through. High heat gives you a burnt exterior with raw meat inside. Three to four minutes per side at medium heat is the right pace.

Gochujeon is best eaten warm, right out of the pan, dipped in a mix of soy sauce and vinegar. The contrast between the crispy egg coating, juicy meat, and the slight sweetness of the pepper is what makes this dish a holiday staple.
