Kkwabaegi is the twisted donut you see piled high in Korean street food stalls and bakeries. The shape is distinctive: two ropes of dough twisted together into a helix, then deep-fried until the outside is golden and slightly crunchy while the inside stays soft and chewy. The twist is not just decorative. It creates more surface area for the cinnamon sugar to cling to and ensures even cooking throughout.
The dough is a basic yeasted dough, similar to what you would use for donuts. The rise time is important. Under-proofed dough produces dense, bread-like twists. Properly proofed dough, given a full 40 minutes in a warm spot, puffs up significantly during frying and has that light, airy interior you want.
The twisting technique takes a few tries to get right. Roll each portion of dough into a rope about 30 centimeters long. Fold it in half, then twist the two halves around each other. Pinch both ends firmly to seal, otherwise they unravel during frying. The twist should be tight enough to hold its shape but not so tight that the dough cannot expand as it cooks.
Oil temperature is the other make-or-break factor. At 170 degrees Celsius, the outside browns evenly while the inside cooks through. Too hot and you get a dark exterior with raw dough inside. Too cool and the dough absorbs excessive oil and becomes greasy instead of crisp.
The cinnamon sugar coating needs to happen immediately after frying, while the kkwabaegi are still hot and slightly oily. The residual heat and surface oil act as glue for the sugar. Wait too long and the sugar does not stick, falling off in a disappointing pile on the plate.
Kkwabaegi are a nostalgic snack for many Koreans, associated with childhood trips to the market or after-school treats from neighborhood bakeries. Modern versions sometimes fill them with red bean paste or custard, but the classic cinnamon sugar version remains the most popular.
