Haemul-jjim is a showstopper dish. A massive platter of shrimp, mussels, squid, and sometimes crab, all coated in a fiery red gochujang sauce and steamed until everything is just cooked through. It is the kind of dish that gets ordered for celebrations and big group dinners at Korean seafood restaurants.

The sauce is where the flavor lives. Gochujang provides the sweet-spicy base, gochugaru adds a brighter, more direct chili heat, and garlic ties it all together. The combination creates a sauce that is complex without being complicated, sweet and spicy and savory all at once. Some versions add a splash of soy sauce for depth and sesame oil for richness.

Cleaning the seafood properly is the unsexy but critical prep step. Mussels need their beards pulled and shells scrubbed. Shrimp should be deveined, though leaving the shells on is fine since they add flavor during steaming. Squid needs its inner cartilage removed and should be scored in a crosshatch pattern on the inside surface. The scoring helps the squid curl attractively when it cooks and also helps the sauce penetrate.

Marinating time should be short, just ten minutes. Seafood is delicate and prolonged contact with the acidic, salty sauce starts to cure the proteins, changing the texture in ways you do not want. A brief toss is enough to coat everything evenly.

Steaming rather than boiling preserves the individual textures of each type of seafood. Shrimp stay snappy, mussels stay plump, and squid stays tender. The steam also prevents the sauce from washing off, so each piece arrives at the table fully coated in that spicy glaze.

The biggest mistake is overcooking. Seafood goes from perfect to rubbery in a matter of minutes. Ten to twelve minutes of steaming is enough for this combination. The mussels will open, the shrimp will curl into C shapes, and the squid will turn opaque. Pull it immediately.
