Steamed Pork Ribs

Galbi-jjim is one of Korea's great celebration dishes. The beef version is the showstopper for holidays, but pork galbi-jjim is the weeknight version that home cooks actually make more often. Pork ribs are cheaper, more forgiving, and cook faster than beef short ribs.

The soaking step is about more than tradition. Thirty minutes in cold water pulls blood and bone fragments out of the ribs, which means cleaner-tasting broth and less scum during cooking. Change the water once halfway through if you see it turning pink. Some cooks do a quick parboil instead, which works too, but soaking is gentler on the meat.

The marinade here uses gochujang as the base, which gives a different flavor profile than the soy-sauce-heavy beef galbi-jjim. Gochujang brings fermented depth, moderate heat, and a natural sweetness that caramelizes beautifully during the long simmer. The sugar is there to push that caramelization further and balance the salt from the soy sauce.

Potatoes are optional but strongly recommended. They absorb the braising liquid and become these intensely flavored, falling-apart cubes that might be better than the ribs themselves. Add carrots too if you want -- they hold their shape better and add sweetness.

The cooking time is the key variable. Pork ribs need at least 50 minutes at a gentle simmer to become tender. Check the liquid level every 15 minutes. If the pot runs dry, the bottom burns and the sugars in the gochujang turn bitter. Add water in small splashes as needed.

When the ribs are done, the meat should pull away from the bone easily. The sauce should be reduced to a thick, glossy glaze. Serve over rice and you have a meal that feels special but cost you less than most takeout.
