Spicy Marinated Crab양념게장

If ganjang-gejang is the elegant, refined side of Korean marinated crab, yangnyeom-gejang is its bold, fiery cousin. Instead of a soy sauce brine, the crabs are coated in a thick paste of gochugaru, garlic, soy sauce, and sesame oil. The result is intensely flavorful -- sweet, spicy, garlicky, and with that rich, briny crab flavor underneath it all.
Yangnyeom-gejang actually has a practical origin story. Not every batch of ganjang-gejang turned out perfectly, especially in the days before reliable refrigeration. If the crabs were slightly past their prime for the delicate soy brine method, coating them in a heavy spice paste was a way to salvage them. The strong flavors of gochugaru and garlic masked any imperfections. Over time, people started preferring the spicy version on its own merits, and it became a distinct dish rather than a backup plan.
The paste is straightforward to make. Gochugaru provides the heat and that signature deep red color. Soy sauce adds salt and umami. Garlic is generous -- six cloves for four crabs is not too much. A touch of sugar rounds out the heat, and sesame oil adds a nutty finish. Some versions include fish sauce or salted shrimp paste for extra depth, but the simpler version here works well.
The same freshness rules apply as with ganjang-gejang: the crabs must be extremely fresh. The spice paste does a lot of heavy lifting in terms of flavor, but it cannot fix crab that has started to turn. Clean the crabs thoroughly, removing the gills (called devil fingers for good reason -- they are not edible), and cut them into manageable pieces so the paste can reach every surface.
One day of marination is the minimum. The paste needs time to penetrate the crab meat. Eat it within three days for the best texture and flavor. Serve cold with hot rice, and do not be afraid to get your hands messy -- that is the only way to eat it properly.
