This sweet rice punch has been served at the end of Korean feasts for centuries, and there is a good reason it has survived this long: it is genuinely one of the best digestive aids in Korean cuisine. The key ingredient is yeotgireum, malted barley powder. When you steep it in warm water, you are extracting enzymes that break down the starches in cooked rice into simple sugars. That is why the drink tastes sweet even before you add any sugar. The fermentation temperature matters more than anything else in this recipe. You want to keep it between 60-65 degrees Celsius, which is why the rice cooker warm setting works so well. Too hot and you kill the enzymes. Too cool and the process takes forever.

The moment you know sikhye is ready is when the rice grains start floating to the surface. That visual cue means the enzymes have done their work and the starches have converted. At that point, you need to stop the process by boiling the liquid, otherwise it will keep fermenting and develop off flavors.

One detail that most recipes skip: after you boil the sweetened liquid, you should skim the foam that rises to the top. This gives you a cleaner, more refined final product. Korean grandmothers were meticulous about this step.

Sikhye is traditionally served ice cold with a few of those floating rice grains in each cup. Some families add ginger slices or pine nuts as garnish. During Chuseok and Seollal, it appears on every holiday table as the official meal-ending drink. In modern Korea, you can buy it canned at any convenience store, but homemade sikhye has a depth and freshness that the bottled versions cannot replicate. The process takes patience, but the actual hands-on work is minimal.
