Buchu-muchim is the banchan equivalent of a five-minute warm-up that ends up being the best part of the workout. It takes almost no effort, the ingredients are basic, and yet the finished dish punches well above its weight in flavor.

Garlic chives -- buchu in Korean -- are not the same as the thin, mild chives you find in Western cooking. Korean garlic chives are flat, broader, and have a distinctly garlicky bite. They are one of the most commonly used vegetables in Korean cooking, showing up in jeon (pancakes), mandu (dumplings), kimchi, and of course, as a simple seasoned side dish like this one.

The key to good buchu-muchim is treating the chives gently. They are not sturdy like bean sprouts or radish. The moment you add the soy sauce dressing, the clock starts ticking. Salt draws moisture from the chives, and within 15 to 20 minutes, they go from vibrant green and snappy to wilted and soggy. This is a dress-and-serve dish, not a make-ahead one.

Cutting the chives into 2-inch pieces is the standard. Too short and they become difficult to pick up with chopsticks. Too long and they tangle together and become unwieldy. Two inches gives you a clean, manageable piece that mixes evenly with the dressing.

Buchu is also valued in Korean food culture for its perceived health benefits. Traditional Korean medicine considers garlic chives a warming food that aids digestion and circulation. Whether or not you buy into the traditional medicine angle, chives are genuinely nutritious -- high in vitamins A and C, and a good source of fiber for a leafy green.

This banchan pairs especially well with rich, heavy dishes. Serve it alongside samgyeopsal, jeyuk-bokkeum, or any braised meat. The fresh, sharp bite of the chives cuts through richness the way a squeeze of lemon would in Western cooking.
