Rice Gangjeong

Gangjeong is the Korean ancestor of the rice crispy treat, and it is a perfect example of how Korean and Western sweets arrived at similar solutions from completely different starting points. The principle is identical: bind puffed grains with a hot sugar syrup, press into a mold, and cut into pieces. But where American Rice Krispies treats use marshmallows, Korean gangjeong uses jocheong (rice syrup) or grain syrup, which creates a firmer, crunchier result.

The syrup stage is the make-or-break moment. You need to cook the syrup until it reaches the soft-ball stage, around 115-118 degrees Celsius. Under-cooked syrup produces gangjeong that falls apart. Over-cooked syrup makes it rock-hard and impossible to cut. If you do not have a candy thermometer, test by dropping a small amount of syrup into cold water. It should form a soft, pliable ball. A candy thermometer removes the guesswork and is worth using.

Work fast once the syrup is ready. It begins setting the moment it comes off heat. Add the puffed rice and sesame seeds to the pot and fold quickly with a greased spatula. Transfer to a greased pan and press firmly using greased hands or a sheet of parchment paper. You have about 2 minutes before the syrup sets too hard to shape.

Traditional gangjeong uses hand-puffed rice made by frying dried glutinous rice in oil until it pops, similar to making popcorn. This produces a more irregular, rustic texture. Store-bought puffed rice cereal works perfectly fine and saves considerable effort. Just use plain, unsweetened puffed rice.

Gangjeong keeps well in an airtight container at room temperature for weeks, which made it a popular Lunar New Year confection and gifting sweet. Variations include adding nuts, dried fruit, or swapping puffed rice for puffed corn or millet.
