Raw Fish Salad

Mulhoe is summer food from the Korean coast, specifically from the southern and eastern port cities where fresh fish comes straight off the boats. The name translates literally to 'water raw fish,' which describes exactly what it is: sliced raw fish, crunchy vegetables, and a spicy-sour sauce, all brought together with ice-cold water to create something halfway between a salad and a cold soup.

The fish has to be impeccably fresh. This is not a dish that hides behind heavy seasoning or cooking. You are eating the fish raw, so any compromise on freshness will be immediately obvious. Flounder and sea bream are the traditional choices because their clean, mild flavor works with the bright, spicy sauce without competing. Firmer-fleshed fish like halibut or snapper work well too.

Slicing thin is important. The fish should be close to sashimi-thick, about 3 millimeters. Thin slices absorb the sauce and meld with the vegetables in each bite. Thick chunks create a disjointed eating experience where you are alternating between fish and vegetables instead of enjoying them together.

The sauce balances sweet, sour, and spicy in roughly equal measure. Gochujang brings the heat and a fermented depth, rice vinegar provides sharp acidity, and a bit of sugar rounds everything out. Some regions add mustard for an extra nasal kick. The sauce should be assertive since it gets diluted by the ice water.

The ice water pour at the end is what makes mulhoe unique. It transforms the dish from a dressed salad into a cold, soupy bowl that you slurp along with the fish and vegetables. The water should be genuinely icy, almost slushy. It shocks the fish slightly, firming up the texture, and creates a refreshing, drinkable broth.

Mulhoe is traditionally a fisherman's meal, something quick and energizing made dockside with the freshest catch. Today it is a summer staple at Korean seafood restaurants, especially along the coast.
