Korean Potato Pancake

Gamjajeon is one of those dishes that teaches you a fundamental cooking concept whether you realize it or not: starch management. When you grate raw potatoes, the liquid that comes out is full of starch. Most Western potato pancake recipes tell you to squeeze that liquid out and throw it away. Korean cooks know better.

Let that starchy liquid sit in a bowl for five minutes. The water rises to the top and the pure white starch settles to the bottom. Pour off the water, and you are left with a concentrated potato starch paste. Mix that back into your grated potato, and you have a natural binder that makes the pancakes hold together without any flour or egg.

This is the single biggest difference between a gamjajeon that crumbles on the spatula and one that flips cleanly and crisps up golden. The recycled starch acts as glue, giving you a pancake that is crispy on the outside and chewy-tender inside.

The frying technique matters too. Medium heat, not high. High heat burns the outside before the inside cooks through. You want a steady sizzle, not aggressive popping. Press the pancakes thin with the back of your spatula -- thinner pancakes crisp better and cook more evenly.

Gamjajeon is traditionally a rainy-day food in Korea. There is something about the sound of rain and the sizzle of jeon in a pan that Koreans find deeply comforting. The pairing is so strong that Korean convenience stores reportedly see a spike in pancake mix sales on rainy days.

Serve these with a simple soy-vinegar dipping sauce. The salty-sour dip contrasts perfectly with the mild, starchy pancake. Add a bowl of makgeolli (rice wine) if you want the full rainy-day Korean experience.
