Pickled Peppers

Gochu-jangajji is the classic Korean answer to a late-summer surplus of green chili peppers. The result is a spicy, crunchy, soy-brined pickle that goes with literally everything -- rice, grilled meat, noodles, or just eaten on its own as a snack.

The critical step most recipes skip over is poking holes in the peppers. This is not optional. Without those tiny punctures, the brine cannot penetrate the pepper's skin, and you end up with peppers that taste like raw chili on the inside and over-salted leather on the outside. A toothpick works, but a fork is faster if you are doing a big batch. Three or four pokes per pepper is enough.

The brine formula follows the same jangajji logic as pickled garlic: soy sauce provides the salt and umami, rice vinegar adds acidity, sugar balances everything out. The ratio shifts slightly here -- less vinegar than the garlic version -- because peppers already have their own sharpness.

Temperature matters too. Pouring boiling brine over the peppers does two things: it briefly blanches the exterior (keeping the peppers green and crisp rather than turning them dull and mushy), and it kickstarts the preservation process. Let the brine cool completely before sealing, though, or you will create condensation inside the jar that can lead to mold.

After a week in the fridge, the peppers will be ready. They will still have a solid crunch and moderate heat, but the soy-vinegar brine rounds everything out. After two weeks, the flavor deepens further. Some Korean households do a second brine cycle -- drain the old brine, boil it again, cool it, pour it back -- which extends the shelf life to several months. For a home batch of 20 peppers, one cycle is usually plenty.
