Ox Tail Soup꼬리곰탕

Oxtail soup, or kkori-gomtang, is a test of patience. There are no shortcuts. The broth gets its signature milky white color and rich body from collagen slowly dissolving out of the bones and joints over hours of gentle simmering. Rush it, and you get a thin, clear broth that tastes like boiled water with a hint of beef.
The process starts well before the pot hits the stove. Soaking the oxtail pieces in cold water for one to two hours draws out residual blood, which would otherwise cloud the broth and give it an off-flavor. After soaking, a quick blanch in boiling water removes any remaining impurities. This double-cleaning step is non-negotiable for a clean-tasting final broth.
Once the cleaned oxtail goes into the pot with fresh water and garlic, the only job is maintaining the right simmer. Too high, and the broth becomes greasy and murky instead of creamy. Too low, and the collagen never fully breaks down. You want a lazy bubble, just enough movement to keep the fat emulsified into the broth. This is what creates that opaque, milky appearance.
Three to four hours is the minimum. Some Korean grandmothers simmer theirs for six or more, adding water as needed. The meat should be falling-off-the-bone tender, and the broth should coat the back of a spoon. When you refrigerate leftovers, the broth should set into a solid jelly, which is how you know you extracted enough collagen.
Seasoning is deliberately minimal. Salt, green onion, maybe a bit of black pepper. The soup is meant to showcase the pure, beefy richness of the oxtail. At the table, each person seasons their own bowl, usually with salt and sometimes a side of chopped green onion in soy sauce.
Kkori-gomtang is a classic Korean restaurant dish, the kind of soup that takes a commercial kitchen all night to prepare. Making it at home is straightforward, it just requires time. The reward is a bowl of soup with a depth of flavor that no amount of seasoning can replicate.
