Jang kalguksu is what happens when Korea's two fermented paste traditions meet its noodle tradition. The "jang" in the name refers to doenjang and gochujang -- the fermented soybean paste and chili paste that form the flavor backbone of Korean cooking. Combined in a broth with thick knife-cut noodles, they create a soup that is earthy, spicy, and deeply savory in a way that simple salt-based broths cannot achieve.

The key technical detail is whisking the pastes into the broth properly. Both doenjang and gochujang are thick and can clump if you just drop them in. Whisk them into the hot broth gradually, making sure each spoonful dissolves before adding more. Some cooks dissolve the pastes in a small amount of broth first, then pour that mixture back into the pot. Either method works.

Doenjang is the soul of this dish. It is often compared to Japanese miso, and while they share a common ancestor, doenjang is fermented differently and has a stronger, funkier flavor. That intensity is what gives jang kalguksu its distinctive character. Gochujang adds moderate heat and a subtle sweetness that rounds out the doenjang's edge.

Zucchini is the traditional vegetable pairing. It softens quickly in the broth, absorbs the jang flavors, and adds a gentle sweetness. Sliced thin so it cooks at the same rate as the noodles.

Kalguksu noodles are thick, flat, and chewy -- they are called knife-cut noodles because they are traditionally rolled and sliced by hand. Store-bought fresh or frozen kalguksu noodles are widely available at Korean grocery stores. In a pinch, fresh fettuccine works as a substitute, though the texture is not quite the same.

This is a one-pot meal that comes together in 30 minutes. The fermented pastes provide so much flavor depth that you barely need to season beyond what is already in the pot. Taste at the end and adjust with a pinch of salt if needed.
