Buldak translates to "fire chicken," and it earns that name. This dish exploded in popularity in Korea during the early 2000s when restaurants started competing to make the spiciest possible chicken dish. The trend went viral before "viral" was even a concept in food culture.

The modern version you see everywhere uses commercial buldak sauce, which is convenient and consistently spicy. Samyang's buldak sauce (the same brand behind those famous fire noodles) is the most common, but any Korean hot sauce labeled "buldak" will work. The sauce combines gochugaru, gochujang, and often capsaicin extract for extra heat.

Adding gochugaru on top of the buldak sauce might seem excessive, but it serves a different purpose. The buldak sauce brings concentrated, sharp heat. The gochugaru adds a fruity, smoky quality and that distinctive red color. Together they create a more complex spice profile than either alone.

The corn syrup is essential. It does two things: it tempers the heat slightly (sweetness is the best counterbalance to capsaicin), and it creates a sticky, glossy coating that clings to the chicken and caramelizes during cooking. Without it, the sauce slides off and pools in the pan.

Chicken thighs are mandatory here, not breast. Thigh meat has enough fat to stay juicy even under assault from all that chili. Breast meat dries out and becomes tough, which makes the spiciness feel even more aggressive since there is no moisture to soften it.

The cheese topping is a modern Korean addition that has become almost standard. Melted mozzarella creates pockets of cool, creamy relief between bites of fire. It is not traditional, but it is wildly popular for a reason. If you are worried about the heat, the cheese is your safety net.
