Barley Tea

Bori-cha is the single most consumed non-water beverage in Korean households, and most Westerners have never heard of it. Walk into any Korean home, open the fridge, and you will almost certainly find a large pitcher of barley tea. It replaces plain water for everyday drinking, and once you understand why, the habit makes perfect sense.

Roasted barley tea has a toasty, slightly nutty flavor that is more interesting than water but not assertive enough to clash with food. It is unsweetened, caffeine-free, and essentially zero calories. It does not stain teeth. It is dirt cheap to make. And Koreans believe it aids digestion, which is why it shows up at meal times alongside everything else.

The roasting is what separates Korean barley tea from simply boiling barley in water. Raw barley produces a starchy, bland liquid. Roasted barley produces a deep amber tea with complexity reminiscent of coffee. The darker the roast, the more robust the flavor. Korean grocery stores sell pre-roasted barley in large bags, and the quality is consistently good across brands. Tea bags are convenient for smaller batches.

Brewing technique is simple: start with cold water, add barley, bring to a boil, simmer 15-20 minutes, strain. Starting with cold water allows for gentler, more even extraction. The simmered version has a richer body than cold-brewed, but both methods work. For cold brewing, soak barley in cold water overnight in the fridge.

One practical note: do not keep barley tea for more than 2-3 days in the fridge. Without preservatives, it can develop off flavors. Make a fresh batch every couple of days, which takes less than 30 minutes of mostly unattended time. Most Korean households treat this as a routine, the same way you might brew a pot of coffee every morning.
