  1. Peel the burdock root and cut into thin matchsticks (about 2 inches long). Soak in cold water for 10 minutes to prevent browning, then drain.
  2. Heat vegetable oil in a pan over medium heat. Add the burdock root and stir-fry for 3-4 minutes.
  3. Add soy sauce, sugar, corn syrup, and water. Cook for 12-15 minutes over medium-low heat until the burdock is tender and the liquid has mostly evaporated.
  4. Toss with sesame oil and sesame seeds. Serve as banchan. This dish is commonly found in gimbap and Korean lunch boxes.
