  1. In a large pot, place the whole pork belly slab with onion, garlic, ginger, cooking wine, doenjang, peppercorns, and salt. Cover with water by 2 inches.
  2. Bring to a boil, skim off any foam, then reduce heat to low. Simmer covered for 50-60 minutes until a chopstick pierces through easily.
  3. Remove the pork and let rest for 10 minutes. Slice into ¼ inch thick pieces.
  4. Arrange on a plate. Serve with saeujeot (salted shrimp paste) or ssamjang dipping sauce, kimchi, and lettuce wraps.
