  1. Bring a large pot of water to a boil. Add spinach and blanch for 30-40 seconds — just until wilted. Do not overcook.
  2. Immediately drain and plunge into ice water (or rinse under cold running water) to stop the cooking and lock in the bright green color.
  3. Squeeze the spinach with your hands to remove as much water as possible. Form it into a ball and squeeze again. This is important — watery spinach dilutes the seasoning.
  4. Place in a bowl. Add sesame oil, soy sauce, minced garlic, salt, and sesame seeds. Toss gently with your hands until evenly coated. Serve at room temperature.
