  1. Slice cucumbers in half lengthwise, then cut into ¼-inch half-moon slices. Sprinkle with ½ teaspoon salt, toss, and let sit for 5 minutes. Squeeze out excess water.
  2. In a bowl, mix gochugaru, soy sauce, rice vinegar, sesame oil, sugar, and minced garlic.
  3. Add the squeezed cucumbers to the dressing and toss well. Sprinkle with sesame seeds and sliced green onion. Serve immediately or chill for 10 minutes.
