  1. Make the marinade: mix soy sauce, sugar, sesame oil, minced garlic, grated onion, and black pepper in a large bowl.
  2. Add the short ribs to the marinade. Massage the marinade into the meat, making sure every piece is coated. Marinate for at least 30 minutes — overnight in the fridge is best.
  3. Heat a grill or grill pan over high heat. Cook the ribs for 3-4 minutes per side until caramelized and slightly charred.
  4. Transfer to a plate. Garnish with sliced green onion and sesame seeds. Serve with rice and lettuce wraps.
