  1. If using fresh doraji, peel and tear into thin strips. Sprinkle with salt and massage for 2-3 minutes to remove bitterness. Rinse well. If using dried doraji, soak in water for 2 hours first.
  2. Heat vegetable oil in a skillet over medium heat. Add the doraji strips and stir-fry for 3-4 minutes.
  3. Add soy sauce, garlic, and gochugaru (if using). Continue to stir-fry for 2-3 more minutes.
  4. Remove from heat. Toss with sesame oil and sesame seeds. Serve at room temperature as a banchan.
