Dalgona coffee became a worldwide phenomenon during 2020, but the technique behind it is worth understanding beyond the trend. The reason it works is chemistry: instant coffee contains compounds that act as surfactants, meaning they stabilize air bubbles. When you whip instant coffee with equal parts sugar and hot water, the sugar increases viscosity while the coffee proteins trap air, creating a stable foam that holds its shape for 30 minutes or more.

This is why you must use instant coffee. Regular brewed coffee or espresso will not whip because it lacks the specific dried compounds that enable foam stabilization. Freeze-dried instant coffee works better than spray-dried because it dissolves more completely and produces a smoother foam. The brand matters less than the type.

The 1:1:1 ratio is non-negotiable. Two tablespoons each of instant coffee, sugar, and hot water. Changing the ratio breaks the foam. Less sugar and the foam deflates. Less water and you cannot whip it. More water and it stays liquid. The ratio was discovered through trial and error by Korean home cooks and spread through Korean social media before going global.

Hand-whisking takes about 400 strokes, roughly 5-7 minutes. An electric hand mixer cuts this to under 2 minutes. A milk frother wand also works if you are patient. You know the foam is ready when it holds stiff peaks and has the consistency of whipped cream, with a light tan color.

The name comes from dalgona, the Korean sugar candy, because the whipped coffee has a similar caramel-toffee color and sweetness. The drink itself is served over cold or hot milk, and the experience is in the contrast: creamy, bitter-sweet coffee foam slowly dissolving into plain milk as you drink.
