Whole Chicken Soup-Stir (Simplified)

Ingredients
- 1 (about 3 lb) Whole chicken (or Cornish hen)
- 8 cloves Garlic (smashed)
- 3 stalks Green onion (whole)
- 2 medium Potato (quartered)
- 1 tablespoon Salt
- ½ teaspoon Black pepper
- 2 tablespoons Gochujang (for dipping) (optional)
- 1 tablespoon Mustard (for dipping) (optional)
Instructions
- Clean the chicken inside and out. Place in a large pot with garlic, green onion, salt, and pepper. Fill with water to cover. Bring to a boil.
- Reduce heat to medium-low. Skim off foam. Simmer for 30 minutes.
- Add the potatoes. Continue cooking for 10 more minutes until the potatoes are tender and the chicken is fully cooked.
- Pull the chicken apart into pieces using tongs. Serve the broth and chicken together. Dip chicken pieces in mustard-vinegar sauce or gochujang.
