  1. In a bowl, mix gochujang, gochugaru, soy sauce, sugar, and minced garlic to make the sauce.
  2. Place chicken pieces in a large pot. Add the sauce and 1½ cups water. Bring to a boil, then reduce to medium heat. Cover and simmer for 15 minutes.
  3. Add potatoes, carrots, and onion. Cover and cook for another 15 minutes until the vegetables are tender and the sauce has thickened.
  4. Garnish with chopped green onion. Serve with steamed rice.
