The Korean pear, or bae, is essential here. It is a different fruit from Western pears: round like an apple, with a crisp, sandy texture and a very high water content. When poached, it becomes tender but holds its shape, unlike Western pears that can turn to mush. If you cannot find Korean pears, Asian pears of any variety will work. Bosc pears are a distant backup.

The curious detail in this recipe is the black peppercorns. You stud the cored pear with whole peppercorns before poaching. This is not for spiciness; at the amounts used, you barely taste the pepper. The peppercorns are traditionally included because black pepper was considered to have warming, throat-clearing properties in Korean herbal medicine. It adds a very subtle depth to the finished dish.

Do not rush the poaching. You want the pears just tender enough that a chopstick slides through with slight resistance. Overcooked pears lose their texture and the dish becomes applesauce. The poaching liquid itself becomes a spiced pear tea that is just as good as the fruit. Serve both together in a bowl, warm in winter or chilled in summer. Some people add a drizzle of extra honey at serving time, but taste the broth first since the pears release a lot of natural sweetness during cooking.
