Daechu-juk is a porridge that reflects the deep role jujubes play in Korean food and traditional medicine. The simmering and blending process is what extracts the flavor and color from the jujubes. Twenty minutes of simmering softens the dried fruit enough that it blends into a smooth puree. This puree becomes the flavor base of the entire porridge. Skipping the blending step and simply chopping the jujubes results in a rice porridge with fruit chunks rather than the unified, naturally sweet porridge you want.

Pitting the jujubes before cooking is important. The pits are hard and will damage most blender blades. Slice each jujube around its equator and pop the pit out. Some dried jujubes come pre-pitted, which saves time. Check the package before starting.

The natural sweetness of jujubes varies depending on the batch and origin. Korean jujubes tend to be smaller and sweeter than Chinese varieties. Taste the porridge before adding honey, as some batches of jujubes provide enough sweetness on their own. The honey should complement, not mask, the distinctive flavor of the fruit.

A pinch of salt is essential even in this sweet porridge. Salt enhances sweetness perception and adds depth to the flavor. Without it, the porridge can taste flat despite the honey and jujubes.

In Korean households, daechu-juk is often served to elderly family members or anyone feeling weak or under the weather. The gentle sweetness and smooth texture make it easy to eat, and jujubes are traditionally associated with strengthening the body's constitution.
