Whole Chicken Soup-Stir (Simplified)

Dakhanmari restaurants in Seoul occupy a specific neighborhood in Dongdaemun, a cluster of small shops that have served essentially the same dish for decades. The model is simple: one whole chicken per table, boiled in a clear broth with garlic and green onion, served with potatoes cooked in the same pot, and a selection of dipping sauces. The name means literally 'one chicken.'

A friend named Camille from Martinique was visiting Seoul for work, and I took her to one of these restaurants on her last evening. She had eaten a lot of spicy Korean food during the week and wanted something gentler. Dakhanmari is one of the mildest items on the Korean menu — the broth is clean and savory, the chicken is tender from the long simmer, and the heat comes only if you choose the gochujang dipping sauce.

Camille asked why the broth was so clear when the chicken had been cooking in it for so long. The answer is the skim. In the first ten minutes of boiling, a grey foam rises to the surface — proteins and impurities releasing from the chicken. You skim this off continuously until the foam stops appearing, and the result is a broth that is deeply flavored but transparent. Skip the skimming and the broth turns murky and slightly bitter.

At home, a whole chicken or Cornish hen works well in a large pot. The dipping sauce for dakhanmari is traditionally a mustard-vinegar sauce — mustard, rice vinegar, a little salt and sugar — which cuts through the richness of the chicken in a way that gochujang does not. Both sauces are typically on the table at the same time.

Clean the chicken inside and out. Place in a large pot with garlic, green onion, salt, and pepper. Fill with water to cover. Bring to a boil.

Tip: Dakhanmari literally means 'one whole chicken.' The broth is intentionally simple to let the chicken flavor shine.

  2. 2

Reduce heat to medium-low. Skim off foam. Simmer for 30 minutes.

  3. 3

Add the potatoes. Continue cooking for 10 more minutes until the potatoes are tender and the chicken is fully cooked.

Pull the chicken apart into pieces using tongs. Serve the broth and chicken together. Dip chicken pieces in mustard-vinegar sauce or gochujang.
